So much is changing and we wanted to run a second interview with Nico Prinsloo and John Harris as they have reinvented themselves, founded their own consultancy two months ago and are now live with clients. How have they found the journey?
The conversation though went far deeper and discussed their observations of the changes taking place in the market, how they see new business models emerging, how many chefs are reinventing themselves and even how many are now cooking from environments that they never expected to be working from and with different products.
