John has long been a passionate advocate of the importance that food plays in our lives. It is central to his beliefs and way of life but he hopes that how food is viewed will change. Food service has for too long been viewed as a commodity when it plays such a more important role in how it is the basis of many cultures, brings communities and people together and is a glue that binds tradition, legacy and daily life. You will often find John talking about his Italian heritage, of the great products and recipes to be found in the villages around Italy and asking why so many take food for granted given we all enjoy coming together so much?
It is a fair question and the hope is that much will change post-pandemic as we all start to come together again and redevelop our networks. Can we view food differently?
